Vegetarian Poke
DIRECTIONS FOR: VEGETARIAN POKE BOWL
INGREDIENTS – POKE BOWL
- 1/2 cup sushi rice
- 1/2 cup water
- 1/2 cup carrot (matchsticks)
- 1/2 cup cucumber (matchsticks)
- 1 radish
- 1 stick green onion or handful of chopped cilantro
- Slice of finely chopped purple cabbage
- 1/4 cup canned garbanzo beans
- 1/4 red bell pepper
- 1 tbsp sesame oil
- salt and pepper
- 2 tbsp rice vinegar
- 2 tbsp furikake
- 2 tbsp edamame beans
- 2 tbsp corn
- few slices pickled ginger
- Wedge of lemon
INGREDIENTS – Ponzu sauce dressing
- 2 tbsp soy sauce
- 2 tbsp lemon juice
- ¼ cup orange juice
- 1 tsp toasted sesame oil
- 1 tbsp cane sugar or sweet ginger jam or honey
- 1/4 cup tahini
- 1 tbsp black sesame seeds (optional)
- 1 tsp crispy chili oil
- ¼ tsp wasabi powder (optional)
- ¼ tsp minced garlic
DIRECTIONS
- Place the sushi rice into a small saucepan. Rinse and drain a couple of times to get rid of the excess starch. Then, add 1/2 cup water and heat the rice up on medium high heat
- When the water just starts to bubble, give the rice a good stir to release any rice that is grabbing the bottom of the pan. Then, cover and cook on medium low for 15 min OR use InstantPot – cook the rice for 6 minutes on high pressure; for Instapot add 2 cups of water for every 2 cups of rice
- Chop the carrot and cucumber into matchsticks. Thinly slice the radish. Finely chop the green onion
- Finely slice the red bell pepper
- After 15min, turn the heat off and let the rice steam further for another 10min, if you are cooking on a stove top
- Add a pinch of salt, the rice vinegar and furikake to the rice. Give it a mix
- Plate the rice and let it cool for 5-10min
- Add on the carrots, cucumbers, red bell pepper, garbanzo beans, radishes, green onion, corn and edamame beans. Thinly slice the pickled ginger and add to the bowl.
- Carefully peel half of an (just ripe) avocado. Thinly slice it width wise using the tip of the knife (will help prevent it from stick to the blade). Shape the avocado into a rose and add to the bowl
- Make the dressing by combining the dressing ingredients in a small mason jar and shake until emulsified
- Pour over the dressing and serve
How to smoke garbanzo beans
- Wash and pat dry the garbanzo beans
- Soak the garbanzo beans in ponzu sauce and garlic
- Marinate for 30 mins
- Take a skillet and dry the sauce on medium high flame; stir occasionally to prevent burning
