Christmas Pilaf
1 cup of cooked rice
1/4 cup cranberry relish
1 tbsp oil
1 tsp cumin seeds
4 tbsp chopped onions
1 tsp chopped ginger
1 tbsp chopped garlic
1/4 cup colorful assorted vegetables
Salt per tatse
Take a frying pan on medium high flame, add oil and cumin seeds
Saute onion, ginger. garlic for 3-4 mins
Add chopped vegetables
Add cranberry relish
Add cokked rice
Stir fry on a high flame; adjust the salt and serve with handful of chopped mint and cilantro
